Lenten Cabbage Croquettes — Fasting and Vegan Friendly Recipe

Ingredients:
- cabbage — 1 pc;
- semolina — 0.5 cups;
- boiled millet — 4 tbsp (or other porridge: rice, buckwheat, oatmeal);
- flour — 2 tbsp;
- carrots — 1 pc;
- onion — 1 pc;
- fresh herbs (dill or parsley);
- spices (mixture of dry vegetables, black pepper) — to taste;
- salt — to taste;
- breadcrumbs — for rolling;
- oil — for frying.
How to prepare cabbage croquettes
Chop the cabbage, place in boiling salted water and cook for 3 minutes. Drain in a colander to remove excess liquid and leave to cool. Put the cabbage through a meat grinder or purée in a blender.
Finely chop the greens. Grate the carrots and dice the onion. Add the spices, black pepper, salt and semolina to the chopped cabbage. Stir to mix well.
Add grated carrots, chopped onions, chopped herbs, flour and boiled millet (or other porridge). Mix thoroughly until smooth.
Form croquettes, roll in breadcrumbs. Place in a preheated frying pan with oil. Cook over medium heat until golden brown on one side. Turn, cover and cook over low heat until done.
To remove excess oil, place the finished chops on a paper towel.
Serve hot with sour cream sauce or your favorite side dish.
