Lenten Semolina Cake — Puffy pastries without milk or eggs

Ingredients:
- semolina — 1 cup;
- sugar — 1 cup;
- flour — 1 cup;
- water — 1 cup;
- vegetable oil — 70 ml;
- baking powder — 10 g;
- salt — one pinch;
- vanilla sugar — to taste;
- fruit — as desired.
How to cook
Mix the semolina, sugar and water in a deep bowl. Mix well and leave to swell for 20 minutes.
Add a pinch of salt, vanilla sugar, oil and mix again. Add sifted flour and baking powder. Knead into a homogeneous dough.
Pour the dough into the greased pan. Top with fruit if desired. Bake in a preheated oven at 180 degrees for about 60 minutes or until a skewer comes out clean.
Allow to cool slightly, then slice and serve.
