Cottage cheesecake recipe — Perfect for breakfast
If you are looking for the perfect breakfast for the whole family, this cottage cheese casserole will become your favorite recipe. Light as a soufflé, tender on the inside and golden brown on the outside, it will definitely win the hearts of both children and adults.

Ingredients:
- cottage cheese 9% — 500 g;
- eggs — 3;
- sour cream (10%) — 3 tablespoons;
- sugar — 3 tablespoons;
- cornstarch — 50 g;
- vanilla sugar — 10 g;
- salt — one pinch.
How to make it
You can use cottage cheese of any fat content, but 9% and higher will make the casserole more tender. If the cottage cheese is low-fat, it is recommended to add more eggs or sour cream to improve the texture. Separate the whites from the yolks. Keep one yolk for greasing, add the other two to the cottage cheese.
Pour sugar and vanilla sugar into the cottage cheese mass, add sour cream and cornstarch. Beat the mixture with a blender until smooth. If you don't have a blender, you can rub the cottage cheese through a sieve and then mix it with the rest of the ingredients.
Separately, whisk the egg whites with a pinch of salt until stiff peaks form. The salt helps to obtain a more stable protein foam, which will ensure the lightness of the casserole.
Gently add the whipped whites to the curd mass. First, add a small portion of the whites, mix from the bottom up, and then add the rest, keeping the texture light.
Cover the baking dish with parchment and put the dough in. Brush the surface evenly with the remaining egg yolk, which will give the casserole a beautiful color and protect it from drying out. Bake in a preheated 175 °C oven for 40 minutes. Then turn off the oven, open the door slightly, and leave the casserole inside for another 20 minutes to prevent it from settling.
The baking time may vary depending on the size of the baking dish. If the dough layer is thinner, the casserole can be ready in 35 minutes. Check for doneness by the golden brown crust on top. Let the casserole cool slightly before serving. Serve with berries, jam or sour cream, and enjoy!
