This potato breakfast beats omelets — fast and satisfying
This breakfast will become a favorite the first time you try it. The combination of a crispy crust, tender filling, and green onion flavor is perfect. It's simple to prepare with no extra ingredients — perfect for a lazy morning or a quick dinner.

You will need:
- Potatoes — 4 pcs (450-500 g);
- Eggs — 2 pcs;
- Salt — to taste;
- Ground black pepper — to taste;
- Green onions — 1 bunch;
- Oil for frying.
How to make
Peel and grate the potatoes on a coarse grater. Add salt, mix, and let sit for a few minutes. Then, squeeze out the excess liquid.
Heat a little oil in a frying pan. Spread the potatoes in an even layer and press down lightly with a spoon. Fry for a few minutes over medium heat.
In a bowl, beat the eggs with salt and pepper and pour the mixture over the potatoes. Sprinkle with chopped green onions. Cover and cook for 10 minutes over low heat.
Gently turn over and fry for another 6–10 minutes without the lid until golden brown. Serve hot. Enjoy!
