Just zucchini and eggs? Grandma's trick will wow you
This zucchini breakfast is a real throwback to my childhood, when the kitchen smelled of roasted vegetables and fresh herbs. Just one zucchini, a couple of eggs, some bacon, and mozzarella, and you have a simple but very tasty dish. Baked until golden brown, it is ideal for a cozy morning on a weekday or weekend.

You'll need:
- eggs — 2 pcs.;
- fresh zucchini — 1 pc.;
- flour — 60 g;
- bacon — 70 g;
- mozzarella — 150 g;
- fresh parsley — to your taste;
- garlic powder — to your taste;
- sweet paprika — to your taste;
- ground black pepper — to your taste;
- oil — for greasing the mold.
How to cook
Grate the zucchini on a large grater, add a little salt, and leave for a few minutes to let the juice flow. Meanwhile, cut the bacon into thin slices and fry until golden brown in a drop of oil.

Squeeze the zucchini well. Add the eggs, flour, garlic powder, paprika, and ground pepper. Mix until smooth.

Line a baking sheet with parchment paper and grease it with oil. Spread half of the zucchini mixture and spread evenly. Top with the fried bacon, chopped parsley, and sliced mozzarella. Cover with the remaining zucchini mixture and spread evenly again.

Bake in a preheated oven at 180 °C for about 30–35 minutes until golden brown. Serve warm.
